As I mentioned last time in my pesto recipes post, I’m a huge fan of pesto (view my pinterest board of pesto-related recipes ). Here’s one of my favorite (super simple!) pesto recipes:
Pesto Chicken Pasta
makes 6 servings (as a full meal without sides – more otherwise)
Ingredients:
14 oz. penne pasta (I like to use Barilla Plus – it has lots of protein and fiber and we love the taste)
1 cubed cooked chicken breast*
4 oz. pesto (I use Classico)
1 Tbsp. parmesan cheese plus more for garnish
1 tsp. olive oil (optional)
*We poach a few chicken breasts at the beginning of each week to use for the rest of the week, so this comes together really quickly!
1. Cook pasta according to package directions.
2. While pasta is cooking, mix together pesto, parmesan, and olive oil in a small bowl.
3. Drain pasta, and mix pasta with pesto mixture and chicken.
4. Garnish with additional parmesan chesse
And your done! Takes me less than 15 minutes. It reheats well, but my husband likes it even better cold than warm! Also stores frozen well. Each serving has: 350 calories (105 from fat), 17.5 g protein, 5 g fiber.

I have a chicken pesto recipe also but I take skinless boneless chicken breast and cut them up into small long slices and then saute them in olive oil in a skillet. Then I add 2 tbl of pesto sauce to them and let them simmer while the noodles are cooking. Also we top them with Parmesan cheese and Pine nuts.

This looks like an easy and yummy recipe to use basil from my garden. I am going to have so much I am thinking of freezing pesto for the rest of the year. Thanks for sharing!
